How not to respond to a complaint about bad food

We often used to go to Ocean Blue. This time we took guests from the UK. I ordered a seafood platter. The line fish tasted rotten. I asked for it to be replaced, not making a fuss so as not to embarrass the guests. The manager came and told me it could not be bad, they always served fresh fish, and he could smell bad fish if it was off (note the contradiction). I insisted, and the plate was taken away without apology. Half an hour later and a couple of requests, still no replacement, and we decided to leave. The manager kept well away from my table. I asked for the bill from the very nice but very embarrassed waitress. They had charged me for the platter! After a brief altercation we resolved that issue and left.

The worst attitude I have seen in a long time.
