How not to be a manager!

Yesterday I took my staff to Colcacchio at Hyde Park for lunch (We are tenants)
Amongst other things we ordered at Pizza with artichokes and parmesan cheese
When it arrived it did not have any artichokes and, because there was not cheese on the base it was dry and inedible
After one bite my guest called the waiter and asked for another pizza as it was unpalatable
At the end of the meal we were billed for the pizza which we did not eat although we had not even been offered it to take home for our dog (even he would not have eaten it)
When we called the manager she was very belligerent with us and argued with us in very broken inarticulate English that we had ordered the pizza and we would have to pay for it.
There was clearly a language /culture/ lack of management experience breakdown and the whole thing was rather unpleasant.
She continued to argue with us and did not apologize (although our mortified waiter did)
The item was eventually removed from the bill after a long argument and we left with a bitter taste in our mouths
The incident was witnessed by the other diners
We immediately complained to the franchise but to date have had no response.
