Supplier cannot live up to vouchers sold

I purchased a voucher for the Waterberg and tried to make a booking and was told there was no availability for a month.
I then waited for two weeks armed with three further potential dates and was told that there was no availability for any of them and that most of July is a block out period after which the voucher expires.

When I tried to get a refund from Groupon I was told that all bookings should have been made within 7 days after whic there is no refund.
This is all well and good if there are any bookings available.
I have now paid for something which I cannot use due to no fault of my own.
