Say i owe them but cant see my payments

So i tried joining the gym two months back only to find i owe a bill from five years back. Although i disagreed with this, i decided to pay them the money they say i owe but asked for my joining fee back. And they asked me to bring a statement to prove they deducted the amount from my account. Now how do they know i owe them but cant see my payments? I'm a trainee and any trainee accountant out there will tell you, the hours of the day are sooo not enough. i don't have time to go to banks for statements. And how am i now suppose to know they will see my payment after i pay the doubt they claim i owe them. I'm seriously worried if this will ever end.
