Bad landing at the Aviator Hotel

How do you run a hotel with over 100 rooms with 1 waiter, 1 barman, 1 front desk and 3 kitchen staff members. We were part of the TETA group on the 30th January 2013. The service was absolutely appalling. Waited for over an hour for chicken livers. No condiments, no drinks, dirty ashtrays on the tables. Complained to the front desk - no-one available to take responsibility. 8 people from overseas booked in before us - I really felt embarrassed being a South African citizen
