Substandard food, poor response

I was served poached eggs and bacon on toast. The poached eggs were in a poor state and the Hollandaise sauce was the color and mostly the consistency of egg yolk - it seemed unlikely that the chef had added any butter, which happens to be a key ingredient of the sauce. At first I thought the the yellow substance on the plate was just egg yolk that had leaked from the poached eggs, but when the waitress brought an extra little bowl of the sauce, it turned out to be of the same consistency, and she said that the sauce was made of egg yolk and lemon juice. I expressed my disappointment, as I am used to much higher quality at this restaurant, but said that I would eat it anyway. At this there was a sort of: okay then, attitude from the waitress and the manager, and no apparent effort to even offer a cup of coffee or something by way of apology,
I hope that my complaint will at least improve the quality of the Hollandaise sauce, but somehow i doubt that this will be the case.
