Changing of date of Debit order without my consent

I signed a DEBIT ORDER with Vodacom for the debit order to go off on the 20th of each month. This month I sad to say that the STOP ORDER did only go off on the 23rd off the month. Do you see the differance it was changed to a STOP ORDER. ALL of my debit orders went through late and that lead my account to go into excess. Now Im knowledgable with the banks services and with a good credit rating the bank could Honour the debit order through. No I have an unpaid on my name and its making me furious as i have sticked to my commitments with them. Then you expect me to even pay an unpaid debit order fee Not on Standard bank. I do not feel im liable for that, so please reverse? I had to change all my debit orders yesterday to a different day. I understand as well that the 20th was on a Saturday but then I expect my debit orders to go through on the monday as its the next business day. If the Vodacom transaction was kept as a debit order the it could have been honoured and I wouldn't have had a unpaid. Could i ask for a letter that says that the changing was not authorised by me and why debit orders went through late and have the unpaid fee reversed? My account never has unpaids!!
