Why not cut of the head before weighing then I will pay for the fish I take response from FNV
I have contacted the national seafood manager, Simon Wilson to ascertain if any changes have been made in-store to the processing of seafood. Please find the feedback below.

The pricing of Head On Hake is approximately 20% lower that of Hake that has already had the head removed. One on the reasons we offer the Fresh Head On Hake is that the customer can see the eyes and gills of the fish in order to ascertain the quality. When the head is removed prior to selling it is more difficult to see whether the hake is fresh or not. We therefore offer the Head On Hake to our customers. Our customers are made aware that we sell the hake on and do not intend to "cheat" any customers...

When filleting the whole fish, the fish is descaled, the head removed and the centre bone taken out. Therefore during this process, if you bought 1kg of Fresh Head On Hake, and it has been filleted, you will receive /- 600g of Hake Fillets. The price will remain the same as when as you had accepted the whole fish.
