Modification of Tsogo Sun booking

My wife booked a holiday at Tsogo Sun hotel through Vitality sometime in August - when we had the money to do so. Booked. Confirmed. Secured. The booking was for the end of November.
It has now come to light that we cannot make this weekend anymore, however, the weekend before does work for us. I first tried (unsuccessfully) on the website to modify the dates - nothing doing. I phone the call center this morning to ask for assistance. Their response; "Okay Mr Reddy, you're going to have to pay for the new booking first then we will cancel the original one and refund you within 7 -10 days."
Where exactly am I to get the money to pay for another booking? I can't be the only person that actually pays for a holiday when they do have the money to do so? So I've had to cancel the booking in the hope that by the time the refund comes through, there will be availability. This is completely unacceptable. Why can't the original booking simply be amended and the client liable for any extra charge? And no provisional bookings are allowed either, so there is literally no guarantee that I will still have my holiday. This process is simply mind boggling and pathetic to say the least.
