Fermented salad made me sick

Went to the store yesterday at about 18:16 to buy food, and went to buy a salad, of macaroni with highlight of carrots and somethinh like brocolli with some sauce/dressing.when i started eating it, it tasted as if had gone through fermentation process, tasted sour, bubbly and like they added a bit of traditional beer, so i threw it away.

but now the problem is that i have had a stomach bug since morning 6 am n it hasnt stopped.my question is Why isnt there anything cooling the salads, keeping them fresh until noon? are u selling old food?
