Bad Service - BrightGirl Photography

We hired Eileen Laubscher, BrightGirl Photography (KZN based) as our wedding photographer for 30Apr'14. We're based in Gauteng. She required a 50% booking fee (unreasonable per the Consumer Protection Act, industry standard is 10%).
From booking date 5Jul'13, we continually phoned Eileen (left detailed voicemail), sent many emails, sms, whatsapp&posted on her personal&business FB page to arrange our engagement shoot (clearly we have to plan long in advance). Eileen only responded on 19Aug'13 (45 days later) after I indicated that we are unhappy.
Due to unprofessional behaviour&lack of service we no longer want to use BrightGirl Photography, as the relationship is damaged& requested a refund on 20Aug'13. She only responded on 28Aug'13 stating that the funds have been allocated elsewhere (which is illegal)&that she will only refund us once she gets another booking for our date. This is unreasonable as we cancelled 8months in advance&Eileen doesn't respond to any communication&is not acting diligently to find another consumer.
We have served Eileen with a letter of demand, as it's absurd to pay R9750 when we've not received anything in return&Eileen hasn't had any expense w.r.t our wedding
